A quarter century of experience has allowed Cornucopia Main Street in Springfield, Oregon to fine tune their menu and focus on burgers, sandwiches and more.
Cornucopia, located at 521 Main Street, will hold a ribbon cutting at 4 p.m. on Friday, December 13. Additionally, the 13th marks the Second Friday Art Walk in downtown Springfield.
With slightly different menu options, Cornucopia Main Street offers a full bar and local beers and wine on tap. Daily specials all week and half-price happy hour from 3-5 p.m. Monday through Friday. Co-owner Nils Stark added, “We’re hoping to be adding some nightly events soon and considering opening for breakfast sometime in the future.”
Nils Stark and Alison Albrecht originally opened the Cornucopia Bottle Market on Monroe Street in 1993, and created a popular neighborhood hub for exploring beer and wine. That success led to their 1999 purchase of the 17th and Lincoln property where, equipped with a kitchen in the converted home, they realized their dream of opening a restaurant and pub.
The next decade saw the sale of their original bottle shop, followed by their 2009 partnership with Phil Calandra to open the second restaurant with an emphasis on a full cocktail bar, an expanded kitchen and menu, and their famously friendly service.
